Outlook email metadata (e.g. To:, From:, Date:, etc.) will be extracted automatically to columns with the correct names.  See the attachment for a detailed specification.  Two sample Email-enabled library templates are also attached, suitable for use in sites based on the English version of the standard SharePoint 2003 or 2007 Team Site.
