Is the file name of the .msg configurable in Email Manager for Outlook?

There is a registry key that can be changed pre- or post-install.

The registry key name and location is: EmailManager\MsgFileNameFormat
The default format is:
{0}_{1:ddMMMyy HH.mm.ss}_{2}
{0} = Sender
{1} = Received Date
{2} = Subject
